French Onion Soup

Rainy days makes me want to have something warm and comforting and for some reason i was craving some french onion soup.  it had been a long time since i had it and an even longer time since i had cooked it.  so i looked up the recipe that i had used in school.


Recipe from the Diploma File of Tante Marie Culinary Academy

Serves 3-4

Cook time: 90 minutes

Ingredients:

  • 454g onions (about 4 onions), finely sliced

  • 50g butter

  • 1 tsp sugar

  • 2 tsp flour

  • 1 litre brown stock (can use beef or chicken stock)

  • salt and black pepper

  • 100-150g cheese, sliced

  • 8 slices of French bread (1 cm thick)

Method:

1.  Melt the butter in a saucepan, add the onions and sugar and cook slowly, stirring frequently until the onions are a rich golden brown.  this must be done slowly and without burning the onions. It should take about 40-60 minutes.

2.  Sprinkle in the flour, mix well and pour in the stock.  Add a pinch of salt and black pepper and simmer gently for 15 minutes.

3.  Brown the slices of French bread lighty in the oven, cover with the sliced cheese and return to the oven to brown the cheese.

4.  Taste the soup and adjust the seasoning, pour into a big bowl or individuals bowls then place the browned bread on top of the soup.


Super simple but super delicious, however you do have to keep a close eye on the onions so that they don't burn but stay nice and brown and caramelized.   other than that it is quite an easy and straight forward recipe.  something about this soup is so comforting but also luxurious.  there is an incredible sweetness from the onions to balance the richness of the stock, then the crunchiness then turned SOGGINESS of the bread to the saltiness and creaminess of the cheese.  a perfect combination of flavors and textures all in a very uncomplicated soup.  a perfect meal to eat on a rainy or cold day.
