Chocolate Chip Oatmeal Coconut Cookies

It had been a crazy long time since I had baked some cookies, normally I would try to make them gluten free and egg free but I didn't have the energy to figure it out plus i just missed eating some normal cookies.  I have made these many times before and they are definitely one of my favorites, because of the many ingredients it isn't your average chocolate chip cookie.


Recipe Adapted from Gourmet

makes 12-14 cookies

Ingredients:

  • 1 stick of unsalted butter (1/2 cup or 113g), softened

  • 1/4-1/2 cup of brown sugar

  • 3 tablespoon granulated sugar

  • 1 large egg

  • 3/4 teaspoon vanilla

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup all-purpose flour

  • 1 cup old-fashioned oats

  • 3/4 cup finely shredded unsweetened coconut

  • 1 cup (170g) of semisweet or bittersweet chocolate (either chips or cut into 1/2-inch chunks)

  • 35g toasted, cooled and chopped nuts (I used walnuts)

Method: 

1.  Preheat oven to 190C/ 375F.

2.  Beat together butter and sugar in a bowl with an electric mixer at high speed until fluffy.  add egg and beat until just blended then beat in vanilla, baking soda, and salt. Add flour and mix at low speed until just blended. Stir in oats, coconut, chocolate, and almonds.

3.  Arrange 1/4-cup mounds of cookie dough about 3 inches apart on 2 lightly buttered large baking sheets (about 8 cookies per sheet), then gently pat down each mound to about 1/2 inch thick. Bake in upper and lower thirds of oven, switching position and rotating pans halfway through baking, until golden, 15 to 18 minutes total.

4.  Cool cookies on sheets 1 minute, then transfer with a spatula to racks to cool completely. Make more cookies in same manner.


So easy and so delicious and an added plus that the whole house then smells like freshly baked cookies.  make sure that your butter is soft, otherwise the sugar won't blend easily with the butter and you end up with a clumpy mess instead of a soft and fluffy blend. the original recipe calls for 1/2 cup of brown sugar but as i don't like my cookies super sweet i had only used 1/4 cup.  the recipe also called for almonds but as i only had walnuts i used these instead, but you can substitute with any nut you prefer or if you don't like nuts then no need to add them.   like with all the other additional ingredients not necessary to add them but it is what makes this cookie different than a normal chocolate chip cookie.  you should definitely try baking them, they won't disappoint.
