Chicken Soboro Rice

I was inspired by my dinner at Enyaa and decided to try making some chicken soboro rice. 


Chicken Soboro Donburi Rice

Ingredients:

  • 1/2 lb (225g) ground chicken

  • 1 Tbsp sugar

  • 2 Tbsp Soy Sauce

  • 1 Tbsp Mirin

  • 1 Tbsp Sake

  • 3 eggs

  • 1 tsp sugar

  • 1/4 tsp salt

  • 15 green beans

  • Steamed Rice

Instructions:

  1. In a medium pot, put together ground chicken, sugar, Soy Sauce, Mirin, and Sake. At medium heat, cook chicken stirring constantly with 4 chopsticks until sauce is all evaporated.

  2. In a different pot, put together eggs, sugar and salt to make scrambled eggs. At medium heat, cook egg mixture stirring constantly with 4 chopsticks until cooked through but not too hard. Remove from heat, and stir a little longer until eggs set.

  3. Boil green beans for 2-3 minutes with some salt. Slice thinly.

  4. Place some Steamed Rice in a bowl, and add chicken, eggs, and green beans on top.


This was sooo yummy!  It is quite simple, although you will need several pans to cook everything more or less at the same time.  instead of green beans, i just blanched some carrots and chinese vegetables in salted water to add more vegetables and to add some color to the dish.  i also added some dark soy sauce for a bit more flavor and also maybe why mine came out a bit darker in color.  they do have a video you can watch on the website that shows you how to prepare this dish, they do show you how to use 4 chopsticks for this dish but i didn't attempt to try, unless you really want your eggs more fine.  this is a super simple dish but a very delicious one that can be easily done for a weeknight meal.  i will definitely be making this again soon.
