Baked Pork Chops with Potatoes

after working in the garden the whole day, I wanted to make something hearty that didn’t take too much effort.

Ingredients:

Rub: (makes enough for 4 pork chops)

  • 1 tsp Worcestershire Sauce

  • 2 tbsp ketchup 

  • 1 tbsp soy sauce 

  • 2 tbsp brown sugar (or white)

  • 1 tbsp olive oil (or vegetable or canola oil)

  • 1 clove garlic, minced

  • 1 tsp apple cider vinegar

Pork Chops:

  • 4 pork chops / cutlets , around 200g/7oz each including bone

  • 800g/ 1.6 lb baby potatoes, larger ones cut in half (Or i did a combination of carrots, potatoes, and onions)

  • 1 tbsp olive oil

Method:

  1. oven to 200C / 390F (fan forced / convection) or 220C / 430F (standard oven).

2. Toss potatoes in oil, sprinkle with salt and pepper. Scatter on baking tray. Place in oven for 15 minutes (giving them a head start).

3. Meanwhile, mix the Rub ingredients together in a small bowl.

4. Slather the pork on both sides with the Rub, reserving some Rub for basting.

5. Take the tray out of the oven. Place pork on the tray.

6. Bake for 10 minutes. Remove tray from oven, spoon over reserved rub on the surface then bake for a further 10 minutes (or 15 minutes for large chops ~ 350g/12oz) (Note 4).

7. Take tray out of the oven, flick to grill/broiler on high. Use a brush to get the golden juices off the tray (especially around pork) and dab it onto the pork.

8. Pop pork under grill/broiler for a few minutes until pork is caramelised and golden. Serve, scraping the juices on the tray onto the pork, then garnish with parsley if desired.


This was quite easy to make, there was some prep work but then the oven does most of the work. the sauce was very tasty, sweet and a little bit sour. as my pork chops were a bit on the smaller side i should have cooked them a bit less as they were slightly tough. so just need to work on the timing of the potatoes and pork chop so that they are done at the same time and both cooked well. I served it with a simple spinach salad to add some vegetables and complete a more balanced meal. a very simple and easy recipe, even for a weekday meal.
