Mango Pudding
I was looking for a dessert to enjoy after cooking a chinese dinner and thought i hadn’t had mango pudding in a long time.

Total Time: 2 hours 15 minutes
Serving: 4
Ingredients:
120ml water
1 packet (1 tbsp) unflavored gelatin (or agar-agar) (or 3 gelatin sheets)
50g granulated sugar
pinch of salt
250ml coconut milk, evaporated milk, or cream
250ml mango puree
shredded coconut to garnish (optional)
Preparation:
place water in pan, heat up to a boil then add gelatin and mix well.
Whisk in the sugar and salt until dissolved.
Stir in the coconut milk, evaporated milk, or cream, then mango puree until mixture is smooth.
Pour into 4 ramekins or small bowls. Cover and chill for a minimum of 2 hours before serving.
