Mango Pudding
I was looking for a dessert to enjoy after cooking a chinese dinner and thought i hadn’t had mango pudding in a long time.

Total Time: 2 hours 15 minutes
Serving: 4
Ingredients:
- 120ml water
- 1 packet (1 tbsp) unflavored gelatin (or agar-agar) (or 3 gelatin sheets)
- 50g granulated sugar
- pinch of salt
- 250ml coconut milk, evaporated milk, or cream
- 250ml mango puree
- shredded coconut to garnish (optional)
Preparation:
- place water in pan, heat up to a boil then add gelatin and mix well.
- Whisk in the sugar and salt until dissolved.
- Stir in the coconut milk, evaporated milk, or cream, then mango puree until mixture is smooth.
- Pour into 4 ramekins or small bowls. Cover and chill for a minimum of 2 hours before serving.
