Mango Pudding

I was looking for a dessert to enjoy after cooking a chinese dinner and thought i hadn’t had mango pudding in a long time.

Cooking Time: 5 minutes

Total Time: 2 hours 15 minutes

Ingredients:

  • 120ml water

  • 1 packet (1 tbsp) unflavored gelatin (or agar-agar) (or 3 gelatin sheets)

  • 50g granulated sugar

  • pinch of salt

  • 250ml coconut milk, evaporated milk, or cream

  • 250ml mango puree

  • shredded coconut to garnish (optional)

Preparation:

  1. place water in pan, heat up to a boil then add gelatin and mix well.

  2. Whisk in the sugar and salt until dissolved.

  3. Stir in the coconut milk, evaporated milk, or cream, then mango puree until mixture is smooth.

  4. Pour into 4 ramekins or small bowls. Cover and chill for a minimum of 2 hours before serving.


It can’t get any easier than this, a incredibly easy and super fast dessert to make that tastes ABSOLUTELY delicious. we basically had made mango ice cream before using the same ingredients, never thought to just add gelatin put it in the fridge to get pudding. we had used coconut milk as that is what we had available but next time i will try with evaporated milk, which i am sure will be just or even more tasty.
