Roasted Pork Chop with Onions

This is a very simple family recipe for those cold nights. a bit of PREPARATION needs to be done but then you can let the oven do the rest.

Cook Time: 1 hour (including oven time)

Ingredients:

For the caramelized onions:

  • 2 large onions, cut in half, and thinly sliced

  • 1 Tbsp olive oil

  • 1 tsp salt

  • 1 tsp granulated sugar

  • 250-300ml chicken or beef broth

For the pork chops:

  • 3-4 boneless pork chops

  • flour or corn starch (gluten free option) for breading

  • 2-4 tbsp oil

  • 3 carrots, sliced into 1 inch pieces

  • 400g or two large potatoes, cut into 1 inch pieces

  • salt and pepper

Method:

  1. Heat the olive oil over medium heat in a large pan, add the onions and stir to coat. Add the salt and stir. Reduce the heat slightly and cook for 20-30 minutes, stirring often, until the onions are golden brown and very fragrant. Add the broth, stir then remove from heat and set aside. taste and adjust seasoning if needed.

  2. Preheat the oven to 175C/ 350F and prepare a large baking dish.

  3. Tenderize the pork chops either with a meat tenderizer or poking it with a fork. Season both sides with salt and pepper then Cover each pork chop with either flour or corn starch.

  4. Heat the oil in a pan and fry the pork chops until LIGHTLY brown. You might have to do these in batches depending on the size of your pan.

  5. Place the pork chops in the baking dish, then add the carrots and potatoes. next pour the onion sauce on top, the sauce does not need to cover all, it just need to be enough to cover the bottom of the pan and a little more. You can add some more broth or water if needed. Cover the dish tightly with aluminum foil and bake for 45-50 minutes, or until the center of the thickest pork chops registers 74C/ 165F.

  6. Serve with some white rice or noodles.


my parents were visiting so we decided to cook this dish, i had actually forgot about this dish. but once i had it, it brought me right back to my childhood. it tasted just like how i had remembered. such a simple dish with such simple ingredients but a very tasty one. pork chops can become easily dry, so i think by cooking it with the sauce and covering it, somehow keeps the moisture. i will certainly be making this again but i might try to incorporate some more vegetables into the dish. it is quite a heavy dish or meat and potatoes and more starch when you eat it with rice or noodles. so either stir frying some green veggies or a salad on the side would make this dish a bit more balanced. or you could keep it as it is to stay warm and filled during those cold winter nights.
