Week 11

Last week or last 2 days of the first term.  Happy and sad about it.

 

November 28th Day 47 AM: Cooking

Last cooking day for the first term. very bittersweet as it is a bit sad that the first term was coming to an end but also happy to finally have a break.  the honey and goats cheese salad was quite tasty and very simple to make.  the lamb was good and also the potatoes and sauce tasted delicious, however the artichokes i feel are a lot of work for what it is.  honestly i think it could have been left out of the dish.  and the lemon crunch pie, we all thought this pie was having a crisis as it didnt know if it wanted to be a pie or crumble (as we put pastry on top plus crumble on top, doesn't make any sense) and then in the filling we put egg whites??  a very strange pie i would say, i will just stick with my version of an apple crumble or apple pie.

Day 47 PM: Guest Demonstration

valentino, the chef of our school's restaurant downstairs did a lovely DEMONSTRATION for us today on the types of dishes they might serve at the restaurant.  not too much actually cooking was done as lots of prep work has been done before, some hours or days in advance.  and using a sous vide machine as a way to doing some of the cooking ensures that whatever is being cooked is cooked to the right temperature.  and most importantly the plating of the food, as people see their food before eating it, you have to make it look inviting and intriguing.

November 29th Day 48 AM: Demonstration- Canapes

  • Artichoke pate

  • Bacon, apricot and honey rolls

  • Butternut squash, red pepper, and cardamon foam shots

  • Crispy frogs' legs with sweet chilli jam

  • Cucumber cups with chevre mousse and deviled pecans

  • Little Rosti with beetroot tartare sauce and John Dory

  • Oysters

  • Quail Scotch eggs

  • Rare beef, sugar snap peas and wasabi cocktail skewers

  • Smoked duck toasts

Day 48 PM: Theory Exam

that was much longer and more detailed than i thought it would be.  but it's done and over with and now to enjoy my 5 week break.
