Cassava Soup

We had bought this PACKAGE of cassava before and really ENJOYED it. as it is a new year we are trying to be healthier, instead of frying we decided to try the recipe on the back of the box.


Recipe from Yuca Loca

Prep Time: 10 mins

Cook Time: 30 mins

Total Time: 40 mins

Serving: 4-6

Ingredients:

  • 1 Onion, cubed

  • 2 garlic cloves, minced

  • 1 carrot. cubed

  • 1/2 leek, cubed

  • 500g cassava

  • 1 tbsp oil

  • 1L vegetable stock

  • pinch of salt and black pepper

  • 2 tbsp parsley, finely chopped

  • cream or milk (optional)

Instructions:

  1. Heat up a pan to to middle heat, then add oil and sauté vegetables for a few minutes until they have softened.

  2. Add the cassava and the vegetable stock. Season with salt and pepper.

  3. Simmer for 15 minutes over medium heat.

  4. Puree everything with the hand blender. Add a dash of cream or milk if you want. Taste and adjust seasoning. Sprinkle with parsley before serving.


Although it was quite a simple recipe, it tasted pretty good. We did however add a few more spices like paprika and chili flakes for a bit more spice. Because the main ingredients is the cassava the soup is very rich, thick and heavy, a small bowl will fill you up quickly. a very quick and easy recipe perfect to keep you warm and filled during these winter months.
