Cassava Soup
We had bought this PACKAGE of cassava before and really ENJOYED it. as it is a new year we are trying to be healthier, instead of frying we decided to try the recipe on the back of the box.

Cook Time: 30 mins
Total Time: 40 mins
Serving: 4-6
Ingredients:
1 Onion, cubed
2 garlic cloves, minced
1 carrot. cubed
1/2 leek, cubed
500g cassava
1 tbsp oil
1L vegetable stock
pinch of salt and black pepper
2 tbsp parsley, finely chopped
cream or milk (optional)
Instructions:
Heat up a pan to to middle heat, then add oil and sauté vegetables for a few minutes until they have softened.
Add the cassava and the vegetable stock. Season with salt and pepper.
Simmer for 15 minutes over medium heat.
Puree everything with the hand blender. Add a dash of cream or milk if you want. Taste and adjust seasoning. Sprinkle with parsley before serving.
