Breaded Cauliflower

We were craving for a schnitzel but didn’t want to eat anymore meat, so decided to use cauliflower than meat.

Serving: 4

Ingredients:

  • 1 large cauliflower

  • 45g cornflour, plus ½ tsp extra mixed with 50ml cold water

  • 1/4 tsp paprika

  • 2 eggs

  • 100g dried breadcrumbs

  • 2 tbsp vegetable oil

  • Grated zest and juice ½ lemon, plus wedges to serve (optional)

  • Preiselbeeren or cranberry sauce (optional)

Instructions:

  1. Remove the cauliflower leaves, Trim the stalk but keep it intake. Cut the cauliflower head into 4 thick slices through the stalk so it holds each slice together. Heat the oven to 350F/180C.

  2. Mix the 45g cornflour, 1/4 tsp of the paprika and salt and pepper in a wide shallow bowl, beat the eggs in a separate wide shallow bowl and put the breadcrumbs in a third. Dust each cauliflower slice in the flour mixture, shake off the excess, then coat in the egg and finally in the breadcrumbs, gently patting on the crumbs to cover.

  3. Heat the oil in a large frying pan over a medium heat, Fry the cauliflower slices in the same pan for 1-2 minutes on each side to brown, then transfer to a foil-lined baking tray. Roast for 12-15 minutes until tender.


This came out better than expected, the cauliflower was perfectly tender, soft but still had a bit of bite to it. I think frying it beforehand helps brown the outside and keep the breading intack. As i was using gluten free breadcrumbs I am always nervous that it just all falls apart but it worked out better than expected. While the cauliflower was roasting i also roasted some potatoes and sweet potatoes to go as a side dish, the usual accompaniment with schnitzel is pommes or french fries but roasted potatoes seem to be a healthier alternative. also schnitzel depending who claims to have invented it, is served with ketchup or preiselbeeren sauce (similar to cranberry sauce) and a lemon slice. it was delicious and a great vegetarian alternative, i will DEFINITELY be making this again.
