Pad Thai 2

I had not cooked thai food in awhile so i decided to make this pretty simple dish again.


Prep time: 20 minutes

Cook time: 15 minutes

Total time: 35 minutes

Serving: 4

Ingredients:

  • 220 g rice noodles

  • 2 - 3 tbsp vegetable or canola oil

  • 1 onion, sliced (brown or yellow)

  • 3 green onions, cut into 3cm / 1 1/4" batons and SEPARATE white and green parts

  • 2-3 garlic cloves, minced

  • 250-300g pork, chicken breast, thinly sliced (shrimp or vegan SUBSTITUTE)

  • 2 eggs, lightly whisked

  • 1.5 cups of bean sprouts

  • 1/2 cup finely chopped peanuts

  • 1 carrot, finely shredded (optional)

  • 1/2 cup firm tofu, cut into 3cm / 1 1/4" batons (optional)

For the Sauce:

  • 3 tbsp tamarind puree (2.5 tbsp tamarind paste with 2.5 tbsp water)

  • 5-6 tbsp (packed) brown sugar

  • 4 tbsp fish sauce 

  • 3 tbsp oyster sauce

For serving: (optional)

  • Lime wedges

  • Ground chilli or cayenne pepper

  • More beansprouts

 

Method:

1.  Cook noodles according to package instructions.

2.  Mix Sauce in small bowl and set aside.

3.  Heat 2 tbsp oil in a large non stick pan, wok or well seasoned skillet over high heat. Add garlic, onion, and white part of the green onion and cook for 30 seconds to 1 minute.

4.  Add pork, chicken, shrimp or vegan SUBSTITUTE and cook for 1 1/2 minutes until mostly cooked through.

5.  Push to one side of the pan, add the beaten egg and pour in on the other side. Scramble using the wooden spoon (add touch of extra oil if pan is too dry). 

6. Add bean sprouts, tofu, noodles then Sauce.

7.  Toss gently for about 1 1/2 minutes until Sauce is absorbed by the noodles.

8.  Add green part of the green onions, carrots, and peanuts (reserving some peanuts for topping at the end). Toss through quickly then remove from heat.

9.  Serve immediately, sprinkled with remaining peanuts and lime wedges on the side, with a sprinkle of chilli and a handful of extra beansprouts on the side if desired. Squeeze over lime juice to taste before eating.


I forgot how good this is. I guess you could always stop by your local thai restaurant to have this but I think i prefer to make it at home as you have more of an option on the ingredients you add. I have always loved pad thai, something about the sweet and sour combination with the chopped peanuts just makes such a delicious dish. I have noticed now there are far more vegan and vegetarian alternatives, which is great when we want a break from eating meat. and a lot more alternatives besides products made up of soy, this one we used it made up of peas. We have tried this brand before and have liked it, quite tasty and the texture is also quite nice. pad thai is definitely an easy dish to make once you have all the ingredients, if it is hard to find tamarind puree or paste you could SUBSTITUTE it with ketchup or you could buy the ready made pad thai sauce.
