Lentil Soboro Rice
as i was making miso soup i had to come up with a main course to match and as we had been eating quite a lot of meat lately i wanted to make something vegetarian.

Ingredients:
1 cup of lentils (cooked with 2-2.5 cups of water)
1.5 Tbsp sugar
3 Tbsp Soy Sauce
1.5 Tbsp Mirin
1.5 Tbsp Sake
steamed rice
Eggs (optional)
your choice of side vegetables either steamed, stir fried or (optional)
Instructions:
place lentils and water into a medium pot, bring to a boil then simmer for 15-20 minutes until lentils are tender.
while lentils are cooking, you can prep and start to cook your vegetables or eggs.
If adding eggs, then mix 3 eggs, 1 tsp sugar and 1/4 tsp salt in a bowl. At medium heat, cook egg mixture stirring constantly with 4 chopsticks until cooked through but not too hard. Remove from heat, and stir a little longer until eggs set.
drain lentils place back into the medium pot with sugar, Soy Sauce, Mirin, and Sake. Cook At medium heat until sauce is all evaporated.
Place some Steamed Rice in a bowl, and lentils and side vegetables.
