Oven Baked Spicy Korean Cauliflower

I know everyone is on the BANDWAGON for everything cauliflower but sometimes it may be the only alternative vegetable that is easily manipulated. but maybe next time i do a combination of vegetables to include carrots or even brussel sprouts.

Servings: 4 

Ingredients:

  • 1 large head of cauliflower cut in pieces

  • 2 tbsp. coconut oil melted

  • 1/3 cup gochujang

  • 2 tbsp. honey

  • 1 tbsp. soy sauce

  • 1 tsp. rice vinegar

Method:

  1. Preheat the oven to 450F (230C). Place the cauliflower in a bowl and coat with the coconut oil. Spread on a parchment paper lined baking sheet and roast for 15 minutes.

  2. While the cauliflower is roasting, combine the gochujang, honey, vinegar and soy sauce in a large bowl and mix well to combine. Remove the cauliflower from the oven and add the the bowl. Mix well to fully coat the cauliflower with the sauce.

  3. Place cauliflower back on the baking sheet and roast for another 15 minutes, until crisp and caramelized.


what a super easy and great alternative to beef, pork or chicken. the cauliflower wasn’t completely soft, it still had some texture and a little bite to it. It was a nice combination of sweet and spicy, served it with sides of pickled cucumber, homemade kimchi, rice, and lettuce. i will definitely be making these again but i would have either let them roast for a bit longer or for the last few minutes turn up the heat so the cauliflower would have crisped up slightly more. other than that it is really a great alternative to have the flavor of korean spicy chicken wing but with vegetables.
