Blondie

I wasn’t sure what to bake and realized it was a very long time since I had a blondie.

Ingredients:

  • 1 cup (226 g) unsalted butter melted

  • 1 cup (200 g) brown sugar* tightly packed

  • 1/4 cup (60 g) sugar

  • 2 large eggs + 1 egg yolk room temperature preferred

  • 2 teaspoons vanilla extract

  • 2 ¼ cups (285 g) all-purpose flour

  • 2 teaspoons cornstarch

  • ½ teaspoon baking powder

  • 1 teaspoon salt

  • ⅔ cup (115 g) white or semi-sweet chocolate chips

  • 1 cup (130 g) chopped walnuts (Optional)

Instructions:

  1. Preheat oven to 350F (175C) and line a 13x9 pan with parchment paper or butter and flour pan.

  2. Combine melted butter and sugar in a large bowl and stir well.

  3. Add eggs, egg yolk, and vanilla extract and stir until completely combined. Set aside.

  4. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.

  5. Gradually stir dry ingredients into wet until completely combined.

  6. Fold in chocolate chips and nuts, if using.

  7. Spread blondie batter into prepared pan and transfer to oven.

  8. Bake on 350F (175C) for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few fudgy crumbs.

  9. Allow to cool before cutting and enjoying


i forgot how delicious and easy these are to make, normally blondies are white therefore white chocolate chips are added but I am not a huge fan of white chocolate so i added semi-sweet chocolates instead. The chocolate chips fell to the bottom therefore the blondies did get a bit stuck and was difficult to get out of the pan although i did add butter and flour to the bottom of the pan, so next time i would definitely use parchment paper on the bottom to make it easier to get the blondies out of the pan. i also added less sugar as i don’t like it to be too sweet, i will definitely be making these again. A good alternative to brownies for someone who doesn’t particular like chocolate.
