Nectarine Cobbler

It has been a long time since i last baked and as we nectarines are in season decided to make a cobbler.

Ingredients:

  • 113.5g (or 4 tablespoons) of butter

  • 250g All-purpose flour

  • 4 tsp baking powder

  • 250g sugar (plus optional additional 2 Tbsp/30 g sugar for cut fruit)

  • 365 ml milk

  • 2 tsp vanilla extract

  • 575g nectarines (sliced - about 8 medium nectarines)

  • lemon zest (from 1 lemon, optional)

  • handful of blueberries (fresh or frozen, optional)

Instructions:

  1. Preheat your oven to 165c/ 325F and melt butter in your 12 x 9 baking dish. Coat all sides of the baking dish with melted butter.

  2. Wash and slice nectarines, then add (optional) sugar, lemon zest, and/or blueberries.

  3. Combine the dry ingredients: flour, baking powder and sugar. Add milk and vanilla extract, then mix until batter is smooth.

  4. Pour batter into melted butter in your baking dish. Add fruit on the top, but do not stir into the batter.

  5. Bake for one hour or until golden brown and an inserted toothpick or knife comes out clean.

  6. Remove from the oven and allow to cool slightly on a wire cooling rack before serving. Serve with ice cream of whipped cream.


I made this for a pot luck dinner and everyone devoured it, within seconds it was all gone. so to say the least that it was good would be an understatement. many people were asking what was it in and how to make it. well all that melted butter does something to make this taste really good and to make the dough moist. this is such a quick and easy dessert to make. I will definitely be making this again, mixing and adding different fruits.
