Grilled Cauliflower with Tahini Yogurt Sauce

We saw someone do a roast cauliflower so we thought why not grill it instead.

Ingredients:

For the Cauliflower

  • 1 head cauliflower

  • 3 tablespoons of olive oil

  • coarse or kosher salt and pepper to taste

  • paprika (optional)

For the Sauce

  • 1/2 cup of tahini

  • 1 cup of yogurt

  • juice of half a lemon

  • 1 tablespoon extra-virgin olive oil

  • salt and pepper, to taste

  • 1 tablespoon finely chopped parsley or coriander, for garnish

Preparation:

  1. Bring pot of salted water to a boil, place whole cauliflower and turn to a simmer and cook until tender, about 8-10 minutes but depends on the size of the cauliflower. Cauliflower should be cooked but not too soft that it already falls apart.

  2. while cauliflower is simmering, make your tahini and yogurt sauce. Blend the tahini, lemon juice and olive oil in a food processor or blender until smooth, then add the yogurt and blend the mixture thoroughly. add the other seasoning, taste and adjust if needed and garnish with parsley.

  3. once cauliflower is tender, drain then Toss with olive oil and season with salt and pepper and paprika if using.

  4. Grill cauliflower on a hot grill until edges caramelize and edges are slightly brown or you can roast it at 375F/190C for 20 to 30 minutes. then drizzle sauce over the grilled cauliflower and enjoy.


what a super easy and tasty dish. I think we boiled our cauliflower a little too long as it was quite soft after we grilled it, so make sure it it just cooked then drain immediately. but it still tastes fine if you overcook it, but I like my cauliflower to still have a bit of a bite to it. also make sure to salt the water and cauliflower after draining as it helps bring more flavor to the cauliflower. the sauce was delicious and also very easy to make, you could also add a bit of chili to add a slight kick. if you don’t have a grill or it isn’t the weather just yet to turn it on, you can also roast it in the oven and then put it on the broil function a few minutes towards the end to get that brown color. This will definitely be often in rotation as a great bbq dish and a delicious dish for vegetarians.
