Grilled Cauliflower with Tahini Yogurt Sauce
We saw someone do a roast cauliflower so we thought why not grill it instead.

cook time: 20-30 minutes
Ingredients:
For the Cauliflower
1 head cauliflower
3 tablespoons of olive oil
coarse or kosher salt and pepper to taste
paprika (optional)
For the Sauce
1/2 cup of tahini
1 cup of yogurt
juice of half a lemon
1 tablespoon extra-virgin olive oil
salt and pepper, to taste
1 tablespoon finely chopped parsley or coriander, for garnish
Preparation:
Bring pot of salted water to a boil, place whole cauliflower and turn to a simmer and cook until tender, about 8-10 minutes but depends on the size of the cauliflower. Cauliflower should be cooked but not too soft that it already falls apart.
while cauliflower is simmering, make your tahini and yogurt sauce. Blend the tahini, lemon juice and olive oil in a food processor or blender until smooth, then add the yogurt and blend the mixture thoroughly. add the other seasoning, taste and adjust if needed and garnish with parsley.
once cauliflower is tender, drain then Toss with olive oil and season with salt and pepper and paprika if using.
Grill cauliflower on a hot grill until edges caramelize and edges are slightly brown or you can roast it at 375F/190C for 20 to 30 minutes. then drizzle sauce over the grilled cauliflower and enjoy.
