Black Bean Quinoa Burger

I am still Trying out different combinations to find the perfect non meat burger patty.

Ingredients:

  • 1 15 oz (500g) can black beans, rinsed and drained

  • 1/2 cup quinoa

  • 1/2 cup breadcrumbs (gluten free option: finely crushed rice crackers)

  • 1 garlic clove, minced

  • 1/2 onion, minced with microplane

  • 1/2 tsp of paprika or cayenne pepper

  • 1/2 tsp cumin

  • salt and pepper

  • 1 tbsp cornstarch

  • 2 tbsp water

Method:

  1. Prepare the quinoa according to the instructions on the package.

  2. Roughly mash the black beans into a bowl with a fork leaving some whole black beans in a paste-like mixture.

  3. Add the quinoa, bread crumbs, onion, garlic, paprika, cumin, salt and pepper into the bowl. Then combine the cornstarch and water and stir until it is a thick and smooth consistency and add it into the bowl. Then mix everything together with hands.

  4. Form the black bean mixture into 5 patties.

  5. Heat the olive oil in a large skillet.

  6. Cook the patties in the hot oil until heated through, 3 to 4 minutes per side.


This was a good alternative, however the middle was still a bit too soft for my liking. i think the best combination is still black beans with breadcrumbs or rice crackers. as the quinoa and other ingredients add more moisture to the mix and therefore ends up still being too soft in the middle. but the cooking this time had made them really look like real meat patties. i SAUTEED some red onions to add on top of the patty, i love sauteed onions as it adds that little sweetness to the burger. i also made my own baked french fries. this is really a perfect and really easy meal to make, you can even make it during the week.
