Gluten Free Apple Cake

As we had many apples leftover from our garden, i had to use them up. So i decided to make some homemade applesauce which i then used some for this cake.

Ingredients:

  • 2 cups King Arthur Multi Purpose Gluten Free Flour Blend can use all purpose flour or another gluten free flour blend

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ¼ teaspoon nutmeg

  • 1¼ teaspoon cinnamon

  • 1/2 teaspoon ginger

  • ½ cup sugar

  • ½ cup coconut sugar or brown sugar

  • ⅓ cup organic canola oil (50ml)

  • 3 Tablespoons unsweetened applesauce

  • one apple about 3/4 cup, peeled and shredded

  • 1 teaspoon vanilla extract

  • 1 teaspoon white vinegar

  • ⅜ cup water (70ml)

  • powdered sugar for dusting or frosting of choice

Method:

Preheat the oven to 350F/175C. In a large bowl, combine the shredded apple, unsweetened applesauce, organic canola oil, water, vanilla extract, and vinegar. Stir well.

Add the sugars and stir to combine. Add the gluten free flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ginger. Mix well.

Pour batter in an 8x8 square pan or 8 inch cake pan.

Bake for 28-32 minutes, or until a toothpick inserted in the middle of the cake comes out clean.

Let cake cool completely, then dust with powdered sugar or layer frosting. Store leftover cake in an airtight container.


This cake was good, but I think next time I will make a few more adjustments. As I like to taste the spices in the cake, I would definitely add more spices to the mix next time. And my cake came out a bit try it could have been the flour blend i used, which meant that i needed to add more liquid to it. i would maybe next time try to experiment with using a flax egg to help bind the cake and add more liquid. with vegan gluten free baked goods, it seems to always be a hit and miss with me, as i find it hard to get the right ratio of ingredients to have the cake be moist and stay together.

i topped it off with a simple lemon cream cheese topping and additional applesauce on the side.
